Saskatoon berries look like a blueberry but they start out green, ripening to bright red, and then finally turning deep bluish-purple. The foliage offers changing seasonal interest as well, turning from green to vibrant yellow, orange, and burgundy come fall. This extremely hardy bush comes from the prairies where there’s a long tradition of using them for pie filling and jams. Like all dark blue small fruits, they’re full of antioxidants and their edible seeds contain a surprising amount of protein.
